白汁
(法语:;法语:[be.ʃa'mɛl];/bɛʃəˈmɛl/或/beɪʃəˈmɛl/[1],),或音译作贝夏媚酱[2],是一种基本酱汁。
白汁是将奶油和面粉煮成的奶油炒面糊放入牛奶中煮制成的。白汁常用于制作其他酱汁,如:干酪白汁(Mornay sauce,芝士加上白汁)等,是法国菜的五大母酱之一[3],也常见于意大利美食的许多食谱,如千层面等。相传这种酱是由法国的路易·德·贝夏媚所创。
