炸鱼皮地区传统小食,常见于香港馄饨面铺与潮州打冷舖。鱼皮多用急冻半滑舌鳎龙脷)皮、鲮鱼皮或黄鳝皮做,最理想用乌头鱼皮炸,鱼皮香脆且无腥味。

炸鱼皮松脆可口,表面常有黄黑渐变色,可配以汤底或牛腩汁粉面、火锅进食,或作为零食单吃。
