炸鱼皮为潮汕地区传统小食，常见于香港的馄饨面铺与潮州打冷舖。鱼皮多用急冻半滑舌鳎（龙脷）皮、鲮鱼皮或黄鳝皮做，最理想用乌头鱼皮炸，鱼皮香脆且无腥味。

炸鱼皮松脆可口，表面常有黄黑渐变色，可配以汤底或牛腩汁粉面、火锅进食，或作为零食单吃。
