菜肴

菜肴，又名料理，粤语又名𩠌，指蔬菜、肉类、蛋类等经烹调后，可食用的食物，不过多半不包括米饭在内。菜肴一般放在餐具上供人食用，也有些菜肴可以直接用手拿着食用。食谱中会记录菜肴需要的材料、份量及烹调方式。

命名

许多菜肴会有专属的名称，例如酸味炖牛肉（sauerbraten）、麻婆豆腐，有些则只有叙述性的名称，例如烤肋排。许多菜肴会以地名来命名，有些是因为和特殊的地点有关，例如波士顿焗豆或是佛罗伦斯丁骨大牛排[1]。
