茉莉酸，是一种在包括茉莉的多种植物中所发现的有机化合物。此化合物属于植物激素中的茉莉酮酸类。茉莉酸首次在1957年时被瑞士化学家 Edouard Demole和他的同事由茉莉酸的甲基酯化形式分离得来。[1]

衍生物

茉莉酸可被转换为其各式衍生物，包括其甲基酯型态的茉莉酸甲酯。此转换可由茉莉酸羧基甲基转移酶催化[2]。在生物体内也可以异构为胺基酸。茉莉酸的去羧化可产生具芳香味的茉莉酮。
