里肌肉

里肌肉是指食用畜类沿背脊两侧各一长条状的肉,尤其后腰位置。此部分的肉肉质结实,富有嚼劲,但含油脂量亦高,所以吃起来不干涩。猪里肌是做猪排的上好部位。用牛的里肌肉做成的牛排称为沙朗牛排英语:)。
