胡椒碱

胡椒碱是一种生物碱，化学式 C17H19NO3，与胡椒脂碱（，为胡椒碱之顺反异构体）同是黑胡椒辣味的来源主成分[1]。它被使用在某些形式的传统医学及杀虫剂中。

辣椒素和胡椒碱所造成的辣味，是借由打开痛觉神经上的TRPV离子信道──用来感受热与酸味的TRPV-1信道而产生的。

此外，胡椒碱被发现能够抑制人体中的细胞色素P4503A4（简称CYP3A4）及P-糖蛋白，两种在新陈代谢及异生质物、代谢物之运输上有重要地位的酶[2]。在动物实验中，科学家发现胡椒碱亦会抑制其他在药物代谢过程中有重要作用的酶[3][4]。借由抑制药物代谢过程，胡椒碱可能能够提升许多化合物的生体利用率。举例来说，胡椒碱能够有效地将姜黄素在人体中的生体利用率提高2000%[5]。由于上述对药物代谢的抑制作用，正在服药中的病人应该小心谨慎地服用胡椒碱，避免产生副作用。

胡椒碱是在1819年，由丹麦科学家汉斯·奥斯特首次发现。
