皂化值或皂化价(英语:),表示在特定条件下皂化1克油脂样品所需的氢氧化钠(NaOH)克数(g)。皂化价用于评估样品中以三酸甘油脂形式存在的所有脂肪酸的平均分子量。皂化价越高,代表平均分子量越低,反之亦然。
